My first thought when I heard of sweet potato and coconut cream soup was ‘YUCK’

I don’t know why, maybe it was the combination or simply the fact that I had just never thought of using sweet potato as a soup.

Anyway, it was a massage client who told me about it. She had made it for her family and both her husband and 10yr old son loved it.

Now, that got me thinking. If her husband and 10yr old son liked it then maybe there was something worth investigation about this sweet potato and coconut cream soup.

Also, both ingredients are anti-inflammatory. Oh, I forgot to mention that she also added turmeric amongst other herbs and spices.

Now, unless you’ve been hiding under a rock (or you just don’t do pinterest or any other social media tool) you will have heard about the amazing anti-inflammatory benefits of turmeric.

That’s 3 anti-inflammatory ingredients in one recipe. Win!

Here's the breakdown

Sweet Potato-  has an amazing list of health benefits including aiding digesting, immune booster, reduces arthritis pain, control diabetes, increases hydration plus many more benefits.

Coconut Cream- Coconut is considered one of the healthiest foods you can eat for a number of reasons such as lowering cholesterol levels, normalizing blood pressure, help to prevent heart attack and stroke, builds muscle, reduces fat among many others.

Tumeric- There is a lot of talk about the amazing powers of tumeric and its medicinal healing abilities for treating inflammation, reducing oxidative stress, improves brain function, lowering the risk of heart disease as well as a cancer treatment and preventative.

So, if that isn’t one of the healthiest soups around then I don’t know what is😊

P.S. The soups was AMAZING! So much better than I expected!

Anti inflammatory Sweet Potato + Coconut Milk + Tumeric Soup

Ingredients

2-3 Sweet Potatoes peeled and diced

1 can coconut milk

1 tsp turmeric (or more if desired)

½ tsp paprika (or more if desired0

Salt and pepper to taste

Method

  1. Peel and dice sweet potato and boil until soft (It should fall apart when you put a knife into it)

  2. Using a hand blender start to blend the sweet potato

  3. When part blended add the coconut milk and continue blending

  4. Add turmeric, paprika and salt and pepper to taste

  5. Serve while hot.
