Pistachio and Chocolate Nut Squares
Sweets have always been my weakness. I’ve tried for years to avoid them which only ended up in me binge eating blocks of chocolate and packets of Tim Tams. So, instead of denying myself I’ve taken the attitude ‘If you can’t beat ‘em, join ‘em’:)
Thus began my quest for healthy, guilt-free, sweet treats. There really are so many yummy treats you can make that are healthy at the same time. You’re only limited by your imagination.
This particular recipe is loaded with nuts which are high in healthy fats such as:
Almonds are high in fiber, protein and vitamin E along with other micro-nutrients
Walnuts provide a good amount of protein as well as manganese, copper and magnesium
Pistachios are a great source of Vitamin B6 which can help boost energy levels, improve skin and eye health and can help lower bad cholesterol.
Cacao - One of the highest super-foods on the planet offering protection from free radicals, potentially protects from cancer, assists in heart health and may help improve eye health.
INGREDIENTS:
2 cups nuts (I used almonds, walnuts and pistachios)
½ cup LSA Mix or flaxseeds
1/2c shredded coconut
1tbsp coconut oil
1/4c coconut sugar
2 tbsp honey
Extra pistachios for topping
TOPPING
1x block dark chocolate, melted (I used Loving Earth chocolate)
METHOD:
Start by placing the nuts in a blender and roughly chopping
Add LSA mix, coconut, coconut oil, coconut sugar and honey.
Continue to blend until mixture is well combined and there are no big chunks of nuts.
Transfer mixture to a greased baking tray and use your fingers to press the mixture over the tray.
Melt chocolate over low heat or by placing a small bowl in a larger bowl of boiling water.
Spread chocolate over the top of the nut mixture.
Sprinkle with extra pistachio nuts and refrigerate
