Cacao + Orange No Bake Bites
One of my goals for this year has been to make sure I always have healthy snacks on hand for when either Kris (my partner) or I get hungry.
I know from past experience that if I don’t have something on hand to eat that doesn’t need any preparation, then it can be the difference between sticking to a healthy eating plan or completely blowing it right out of the water
These cacao and orange balls have been just the thing to keep the hangry monsters away AND they are healthy and quick and easy to whip up.
CACAO + ORANGE BITES
Prep Time: 10-15 mins
INGREDIENTS:
1 Cup almond meal
10 medjool dates or 1/2 cup dried dates soaked for 20-30 mins
Rind of 1 orange
Juice of 1 orange
1 tbsp cacao
2 tbsp cacao butter
2 tbsp honey
Desiccated coconut (enough to roll the bites into)
METHOD:
Lightly pulse dates in a food processor.
Add the remaining ingredients (except coconut) to blender and pulse together
Now use clean hands and combine mixture until all ingredients, especially cacao butter, is thoroughly blended together.
Use a teaspoon and spoon mixture into your hand and roll into a smooth ball.and then roll in desiccated coconut.
Place bites on a plate or in a container and store in the fridge or freezer.
NOTES:
The other good thing about these bites is that they are quite filling so you won’t be able to eat too many of them at once:)
You can also experiment with the ingredients and get a bit creative. Add your choice of nuts and seeds and dried fruit to make up your own no-bake bites depending on what you like:)
